Should we baptize our children?

If its that important to him, I'd let them get baptized. Just because they are baptized doesn't mean they are forced to follow that religion. When they are older, they can be confirmed if they want to stay Presbyterian, or they can choose not to be confirmed and follow whatever beliefs they want. I had my children baptized because that was important to me, but whether or not they follow through with being Methodist will be completely up to them
